12 carrots
3 Tbsp good olive oil
1 1/4 tsp Kosher salt
1/2 tsp freshly ground black pepper
2 Tbsp minced fresh dill or flat-leaf parsley

Directions:
Directions:
Preheat oven to 400º F.

Peel and wash the carrots.
If carrots are thick, cut them in half lengthwise.Cut each carrot in 1 1/2-inch-thick slices.
Toss them in a bowl with the olive oil, salt & pepper. Place on a sheet pan in one layer and roast in the oven for 20 minutes.

Toss the carrots with minced dill or parsley, season with salt & pepper to taste, and serve.

FARM MEMORY:

UNHEARD OF!!!

My Mom’s family was big. She had 15 brothers and sisters. So, as you can imagine, family events were pretty wild.
The seating arrangements when we went for a family event at the farm, were different. Maybe it was an ethnic or “German” thing or a farm thing. I’m not sure.
Anyway, the seating was done like this.
First the men sat down to a nice hot dinner and the women served the table.
Then the women ate and lastly, the children got their plates of food, sat on the stairs and ate off our lap. It was kind of cold by then…thank goodness for gravy.
In this day and age, this is totally unheard of. Now children are always first.
