1 Tbs. sugar
1½ tsp salt
½ cup apple cider vinegar
¼ cup red wine vinegar
2 whole cloves of garlic, cut in half (optional)
5 whole black peppercorns (optional)
2-3 cups water

Directions:
Directions:
1. Boil 2 cups water. Peel and thinly slice the onion into approximately 1/4-inch moons. Peel and cut the garlic clove in half.

2. Dissolve the sugar and salt in boiling water. After dissolved, add sliced onion for 1 minute. Add vinegar, garlic and peppercorns and remove from heat.

3. Store in a glass container with a tight lid. The onions will be ready in about 30 minutes, but are better after a few hours. Store in the refrigerator. They will keep for several weeks.



Note: Other options to add are rosemary sprig, 3 small sprigs fresh thyme, 1 small dried chili pepper
