Multi grain bread slices.................. 3

Vegetables: medium sized
Capsicum....................................... half
Tomato........................................... half
Boiled potato.................................. half
Cucumber....................................... half
Onion.............................................. half

Sauces & Ketchup
Tomato ketchup............................. 2 tsp
Coriander & green chilli paste....... 2 tsp

Ingredients for coriander chilli paste
Fresh coriander............................. 1 cup
Green chilli.................................... 2
Salt................................................ a pinch or as per taste
Lemon juice................................... 2 tsp
Ginger............................................ 1/4 inch
Water............................................. 1-2 tsp to grind

Other ingredients
Cheddar/pizza Cheese.................. 1 tbsp or small cube
Salt................................................. to taste
Black pepper.................................. to taste

Directions:
Directions:
1. In a mixer, grind all the ingredients given under coriander chilli paste.
2. Cut all vegetables into thin round slices
3. Toast bread slices until golden brown.
4. Spread tomato ketchup on one slice. Lay chopped tomatoes, onions & capsicum on it. Sprinkle salt & pepper to taste.
5. Cover it with second slice. Grate cheese on it and lay potatoes and cucumber on it. Sprinkle salt & pepper to this slice as well.
6. Spread coriander chilli paste on third slice and cover the sandwich with it.
7. Cut the sandwich into half and serve it with ketchup, dip or sauce of your choice.


Notes:
* It is not a mandate to toast bread slices. You can choose not to toast and make sandwiches.
* Vegetables mentioned above are most commonly used in Bombay Sandwich. You can add more vegetables of your choice.
* I tried to keep the recipe as healthy as possible. Please feel free to apply butter or margarine on bread slices.
* You can also use panini press to make this sandwich. Serving the sandwich as per the recipe above helps retain natural and fresh flavors of vegetables.
