1 bunch kale
2 cloves garlic
2 Tbsp butter
2 Tbsp creme fraiche

Peel and roughly chop the garlic.

Remove and discard the kale stems; roughly chop the leaves.

Heat 2 teaspoons of olive oil on medium-high until hot. Add the garlic; season with salt and pepper. Cook, stirring constantly, 30 seconds to 1 minute, or until fragrant. Add the kale, season with salt and pepper. Cook, stirring occasionally, 2 to 3 minutes, or until slightly wilted. Add the remaining butter and ½ cup of water; season with salt and pepper. Cook, stirring occasionally, 2 to 3 minutes, or until the kale has wilted and the water has cooked off.

Transfer to a bowl, stir in the creme fraiche. Season with salt and pepper to taste.
