Ingredients: Butternut Squash Organic Kale Bell Peppers: Green, Yellow, Orange & Red Red Onion Roasted Almonds Fresh Lemon Fresh Lime Mediterranean Quinoa Raw Honey Olive Oil Ground Pepper

Directions:Chefs choice Boil, Bake or Microwave Butternut Squash until tender. Allow squash 2 minutes to cool, once cooled cut in half placing it face down on parchment paper and placed in the oven on broil for 5 minutes until showing signs of Caramelized. Place Almonds or Walnuts in the oven for 2 minutes and remove. Once squash is caramelized place face up on parchment paper and begin cutting up your vegetables. Be sure to turn oven off, once oven is off, place squash back into oven to keep warm. Finely chop all vegetables and place into a bowl. Drizzle olive oil over the vegetables while massaging the oil into the vegetables. Lightly squeeze both the lemon & lime over the vegetables to add a zesty flavor. Boil the Mediterranean Quinoa for 5 minutes removing the squash from the oven and placing onto a dish. Make sure the squash is upside spooning the vegetables on first, then Quinoa and Almonds or Walnuts with a drizzle of raw honey and ground pepper. |
