4 thinly sliced chicken breasts
3 Tbs olive oil
1/4 cup white wine
3 Tbs butter
Juice from 1 lemon
2 Tbs. capers
Salt & Pepper to taste

Directions:
Directions:
1. Season chicken breasts with salt & pepper.

2. Heat skittle with olive oil to high heat and add the chicken. Brown for 2 minutes on each side, transfer to casserole dish, then set aside in a warm oven.

3. Add the wine to the skillet over medium high heat. Reduce down for 2 minutes, stirring constantly and scrape brown bits off bottom of the pan.

4. Stir in lemon juice and capers.

5. Remove from heat and add butter, stirring until melted. Add salt and pepper to taste and pour over chicken



Note: If you cant find thinly sliced chicken breasts, slice regular breast in two lengthwise and pound with a mallet until flattened.
