2 egg yolks
1 tsp. Dijon mustard
Freshly ground black, white and cayenne pepper, to taste
1/2 cup spicy oil
(1 cup vegetable oil with 2 tsp. dry, hot red pepper flakes marinated for 48 hours)
1/2 tsp. Worcestershire sauce
2 Tbsp. finely chopped onion
2 Tbsp. finely chopped parsley
2 Tbsp. small capers
4 anchovy fillets, finely chopped

1 lb. filet mignon, finely ground

Directions:

Combine egg yolks, mustard, salt & pepper in a large wooden bowl. Stir together with a large wood spoon. Add spicy oil in a slow steady stream. Add the Worcestershire sauce.

With a fork, crush the onions, parsley, capers and anchovies into the mixture.

Add the meat and, using a mashing action, blend the sauce with the meat.

Put in serving bowl, serve at room temperature with small garlic toasts.

This recipe comes from the Hirschmann's and I love the flavours in this tartar.

New Year's Eve 2015, Mike & Wendy made this for us and we had it in front of the fire at the cottage. We followed it with a Cheese Fondue and, of course, lots of red wine.





QUIP:

Vodka mixes well with everything, except decisions.
