BBQ CARROTS Recipe

2 lbs. carrots, peeled and cut into large chunks
1 whole onion, quartered
Olive oil
Kosher salt
Freshly ground black pepper

aluminum foil wrap (ie. - Alcan or Reynolds)
Pam vegetable spray

Directions:
Directions:

Prepare vegetables.

On a large piece of foil that has been sprayed with Pam, in the center, pile up the carrots and onion. Sprinkle with salt and pepper. Drizzled olive oil over the top of the vegetables, approx. 1 Tbsp.

Wrap the vegetables in the piece of foil making sure to completely enclose the carrots & onion.
Tear off 3 more large pieces of foil.
Wrap each piece separately around the vegetables.
You want 4 layers of foil wrap on the bundle.

Place on a preheated barbecue -- high heat. Turn down heat to medium-high when vegetable package goes on.
After 30 minutes, turn the bundle over and cook on that side for 30 minutes.
Remove and serve.

NOTE: These will stay hot in the foil for quite a while. So, it's OK if meat or other part of dinner is not
ready. These can sit.

This a great side for grilled meats.

This is a good summertime recipe when you use your BBQ a lot. Clean-up is a breeze as there are no pots, just the foil to be thrown out.
Carrots done this way taste very carroty and the onions are super sweet.
