Standing Rib Roast -- 4 lb. or more

Kosher salt
Freshly ground black pepper

Let meat stand at room temperature for at least 1 hour.

Preheat oven to 375º F.

Rub the meat all over with salt & pepper.
Place, fat side up, on a rack in a shallow, uncovered pan.
Place meat in preheated oven and roast for 1 hour.
Turn off the heat, but DO NOT open the door of the oven at any time until the meat is absolutely stone cold. This will take AT LEAST 6 hours.

If you want to refrigerate overnight, be sure to bring the meat back to room temperature before proceeding.

Preheat oven to 375º F. again.
45 minutes before serving place meat in preheated oven and cook for 45 minutes.
Meat will be brown & crisp on the outside and pink, not red, all the way through,

Prime Rib roast should be 4 lb. or more. This method does not work for a smaller roast.


This can be started the day before, refrigerate, bring meat back to room temperature, then wait until the last guest arrives before turning on the oven and finishing the meat.

You can also start early, on the day you want to serve it....just watch your timing.
