2 lb. regular plain yogurt (not low-fat; 3% to 5% M.F.)
1/2 cup good olive oil
Zest of 1 lemon
1/2 cup freshly squeezed lemon juice (3 lemons)
3/4 cup fresh whole rosemary leaves (3 bunches)
2 tsp Kosher salt
1 tsp freshly ground black pepper

1 - 5 lb. butterflied boneless leg of lamb

Directions:

Combine the yogurt, olive oil, lemon zest and juice, rosemary, salt and pepper in a large bowl. Add the lamb, making sure it is covered with the marinade. Marinate in the refrigerator overnight or up to 3 days.

Bring the lamb to room temperature.
Turn on barbecue (gas or charcoal -- either is fine).
Scrape the marinade off the lamb, wipe the meat with paper towels, and season it generously with salt and pepper.
Brush the grill with oil to keep the lamb from sticking, and grill on both sides until the internal temperature is 120 to 125 degrees for rare. This will take from 40 minutes to an hour, depending on how hot your grill is.

Remove the lamb to a cutting board, cover with aluminum foil and allow to rest for 20 minutes.
Then slice & serve.

My goodness, I have been making this lamb recipe for a very long time.

More often than not, I will make it early in the day and serve it at room temperature.

I serve it with a Mediterranean Pasta salad and grilled pitas with hummus. It is a favourite cottage meal because it can be served at any time....so, if cottage guests get hung up on Hwy. 400 on their way up, dinner won't be spoiled.

I love recipes like that. Don't you?
