1 tbsp + 1 tsp olive oil, divided
1 cup thinly sliced carrots
2 cups broccoli florets
1 lb boneless skinless chicken breast, grilled and cut into 1" pieces
4 garlic cloves, minced
1/4 c chicken broth
1/4 c soy sauce
3 tbsp honey
2 tsp cornstarch
salt and pepper to taste

Directions:

Cut the chicken breast in half length wise to make it cook quicker. Spray with cooking spray
and season with salt and pepper. Cook for 5 minutes on each side til grilled lines appear and cooked through. Cut into 1" pieces.

Heat 1 tbsp oil in large pan over medium heat.

Add the broccoli and carrots and cook for approximately 4 minutes or until tender. Add the garlic to the pan and cook 1 minute til fragrant.

In a bowl whisk together the chicken broth, honey, and soy sauce. Pour over the chicken and vegetables and cook for 1 minute.

In a small bowl, mix cornstarch with 1 tbsp cold water til smooth. Add to the pan and bring to a boil and cook 1 minute or until sauce thickens. (I like my sauce thicker and keep adding cornstarch and water til nice and thick!)

Service with rice made with chicken broth.
