1 ½ cups milk
½ tsp. thyme
½ tsp. oregano
¼ tsp. black pepper
3 eggs, lightly beaten
½ cup melted butter or margarine
5 to 10 sheets filo dough
1 jar marinated artichoke hearts, drained and chopped
½ lb shrimp, cooked
1 cup grated swiss cheese
½ cup chopped green onions
½ cup chopped red or green peppers
Bibb or butter lettuce leaves

Scald milk and cool slightly. Add thyme, oregano, and pepper to milk. Fold in beaten eggs and set aside. Butter bottom of 15x10-inch jellyroll pan. Working quickly, like pan with layers of filo dough, brushing each sheet with melted butter. Fold sides back in toward pan, forming neatly rolled edge. Arrange artichoke hearts, shrimp, cheese, green onions and red pepper in layers on ppastry. Pour in egg mixture. Bake at 375º for 30 minutes. Cool slightly. With sharp knife, cut into 2-inch squares then place each square on lettuce leaf.
