About 10 qts. cut up dried bread and rolls
About 4 cups milk

Heat the milk. Pour over the bread in a large bowl and mix to slightly moisten the bread. Begin adding eggs, a few at a time, and mixing with the bread. Add eggs until you can make baseball size dumplings with your hands that stick together. Moisten your hands with water. Reshape the balls and put aside to let the milk and egg penetrate. Cover with a dampened cloth until ready to cook. Bring a large pot of water to a boil. Wet your hands and give the knoedl another squeeze before dropping them into the boiling water. Boil 20 minutes and lift out with a slotted spoon. Knoedl should drop from a fork and bounce. Serve with lots of gravy.
