1 lb chicken tenderloin
4 Tbl capers
1 lemon
1/2 C white wine
4 oz butter
corn starch
salt
pepper
garlic several cloves
Oil for frying

Directions:
Directions:
In a shallow dish, combine cornstarch, salt and pepper. Dredge - dust chicken in cornstarch mix.

Clean the chicken tenderloin in water and pat dry. Remove the sinew by placing the piece of chicken on the chopping board, use a finger or knife to press down on on the thick part of the white sinew, then gently pull the chicken in the opposite direction. Or hold sinew with finger and use knife to help pull away.

In a frying pan heat oil, dredge the chicken and fry it until golden brown. Don't forget to fry both sides.

Place cooked chicken pieces in a dish.

Place mince garlic, capers, butter, and lemon juice in the same sauce pan. Stir.

Put the chicken back in the sauce pan. Add wine. Cover chicken with sauce.
