3/4 lb fettuccini pasta
1 lb peeled, deveined, tail-off shrimp (whatever size you want - I prefer medium)
Olive oil
Butter
1/2 medium onion
1 garlic clove
1/3 cup white wine (I used Chardonnay)
2 cups heavy whipping cream
1/3 cup shredded parmesan cheese
Salt
Pepper

Directions:
Cook pasta according to package - I added salt and olive oil to mine. While pasta is cooking, prepare the shrimp and sauce. Season shrimp with salt, pepper and about 1/4 tsp paprika. I also used Tony's because I like a little spice! Warm about a tbsp of olive oil in a skillet. Once oil is warm, cook shrimp on medium-high heat in a single layer (about 2 mins per side). Remove shrimp from skillet and place in a separate dish to prevent over cooking. In the same skillet, add 2 tbsp of butter and chopped onion. Sauté until soft and golden - about 3-5 mins. Add minced garlic and sauté another minute until fragrant. Stir in wine and boil until about 25% of the liquid is left. Stir in 2 cups of cream and bring to a light boil, then let simmer about 2 mins. Stir in 1/3 cup parmesan cheese. Let it come just to a simmer then turn off heat and mix in pasta and shrimp. Season with more paprika, Tony's, etc. to taste! Serve with garlic bread. Try not to eat the entire batch :)

This pasta is even BETTER the next day!!!! Just place pasta in a skillet with a splash of milk and turn it on low for a few minutes!
