1 lb. fresh zucchini, diced
½ C olive oil
3 T butter
1 C chopped onion
1 C chopped celery
2 C peeled, diced potatoes
¼ lb green beans
1 can cannellini beans
2 C beef broth
4 C water
1 can Italian canned tomatoes, undrained
Salt and pepper to taste
Grated Parmesan on individual bowls.

1. Soak zucchini in cold water for 20 minutes. Pour off water.
2. In a large stockpot, melt butter, add oil, onions, celery and saute.
3. Add carrots, potatoes, and snapped green beans. Continue to cook for 5 min. Add zucchini and cook another 5 min.
4. Add the broth and water, tomatoes and salt. Bring to a boil.
5. Cover the pot, lower the heat and simmer for 2 ½ hours.
6. Add the cannellini beans and cook for 30 more minutes.
7. The consistency should be fairly dense. If too thick you may add more broth. Remove from heat.
