1 stick butter
4-6 chopped green onions
½ C chopped bell pepper
½ C chopped celery
3 T minced garlic
½ C flour
2 C chicken broth
2 lbs crawfish tails, cleaned and cooked
2 T Tony Chachere’s Cajun Seasoning
2 T Lousianna Hot Sauce
¼ tsp Old Bay Seasoning

Directions:

1. Melt butter in the stock pot and sauté onion, bell pepper, celery until tender.
2. Add garlic and slowly stir in flour. Mixture will thicken. Whisk in slowly, the chicken broth. Bring to a boil.
3. Add Cajun seasonings, salt, pepper, hot sauce and Old Bay.
4. Stir in the crawfish. Bring back to boil. Cover and lower heat to simmer for 30 min.
5. While etouffee simmers, make rice and warm up French bread.
