Roast should stand at room temp for 1 hour.
Rub minced garlic, salt and pepper to taste on all sides of roast.

Directions:

Sear/Brown all sides in skillet.
Place on a rack, in roasting pan, bone side down. Bake at 450* for 20 min. Then lower oven temp to 350* for 1 1/2 hours for med rare roast.
Take out of oven and tent with foil for 15 min to rest.
Slice and enjoy.
