2c all purpose flour
1c granulated sugar
3 tsp. baking powder
3 tbsp. cinnamon
1 1/4 tsp. salt
2 eggs
1c buttermilk
1 1/3c vegetable oil
2 tsp. vanill extract

Dry Ingredients:

In a medium bowl, combine flour, sugar, baking powder, cinnamon and salt; whisk thoroughly.

Wet Ingredients:

In a separate medium bowl, mix eggs, buttermilk, vegetable oil and vanilla extract. Next Blend in dry ingredients with the wet ingredients until smooth.

Streusel: Combine 3 tbs. butter melted with 1/4c granulated sugar,1/3c pecans, 2 tbs. flour and 2 tbs. of cinnamon. Mix thoroughly with a spoon. The mixture will be clumpy.

Next prepare the loaf pan with a non-stick baking spray (Baker's Joy). Pour half the batter into the loaf pan. Sprinkle half the streusel mixture on top of the batter evenly. Pour the remaining batter into the loaf pan and sprinkle top with remaining streusel mixture evenly.

Bake at 350 degrees for 55­60 minutes. Test batter to make sure it is thoroughly baked. Allow the loaf to cool for about 15 minutes
