1/4 C Steel cut oats
1/4 C Boiling water
1/3 C Almond milk (vanilla, plain, coconut)
1 Tbsp Black organic chia seeds
1/4 C Greek Yogurt (plain or vanilla)
1/3 C fresh or frozen fruit
1 Tbsp unprocessed honey (or maple syrup)
1 500ml jar (1/2 litre canning jar is best)

• Mix oats and boiling water in jar
• Add almond milk and stir
• Add chia seeds and stir well
• Add Greek yogurt (I use zero fat), mix well
• Top with fruit (any fruit or combo of fruit)
• Top off with honey
• Seal jar and leave in fridge overnight. Stir to mix fruit and honey throughout and enjoy!

Options: Blueberries or Strawberries are good mixed with bananas. You can also shred an apple and mix through, adding 1/2 Tsp of cinnamon. Substitute 1/2 Tbsp of the honey with 1/2 Tbsp maple syrup. Toss in some almonds or pecans for more crunch. The consistency will be creamy with the oats making it a bit chewy!
