1½ lb. ground beef
1 clove garlic (minced)
1 tbl. parsley flakes
1 tbl. basil
1½ tsp. oregano
1½ tsp. salt
1 can tomatoes (2 cups)
2 6 oz. cans tomato paste
2 tsp. dehydrated onions
1 10 oz. pkg. lasagna noodles (I use about ¾ pkg.)
2 12 oz. cartons large curd cottage cheese
2 beaten eggs
½ tsp. pepper
1 tsp. salt
2 tbl. parsley flakes
½ cup parmesan cheese
1 lb. shredded mozzarella cheese

Brown meat. Drain excess fat. Combine meat, garlic, parsley, basil, oregano, salt, tomatoes, tomato paste and onions. Simmer uncovered until thick (45-60 minutes), stirring occasionally. Combine cottage cheese with eggs, pepper, salt, parsley, and parmesan cheese. Cook lasagna noodles according to package directions. Cover the bottom of a 13X9-inch baking dish (sprayed with PAM) with a layer of lasagna noodles. Spread 1/2 of the cottage cheese mixture on top of the noodles. Then 1/2 of the mozzarella and 1/2 of the meat mixture. Top this with another layer of noodles, followed by the remaining cottage cheese, then meat sauce and lastly, the remaining mozzarella. Bake at 350º in a preheated oven for 30 minutes. Let stand 10-15 minutes before serving. Leftovers can be frozen.

This recipe came into the family through my Aunt Cecile, my Uncle Bill's first wife. I don't make it often because of the time involved. But it is a good, straight-forward, tried-and-true recipe we all seem to enjoy.
