10 medium black mushrooms
1 lb. flank steak
1 tbsp. peanut oil
1 tsp. cornstarch
1 tsp. salt
1 tsp. sugar
1 tsp. soy sauce light or dark
⅛ tsp. white pepper
1 ½ lbs. Asparagus or Broccoli or Pea Pods
2 green onions with tops
¼ cup of chicken broth or cold water
¼ cup oyster sauce
2 tbsp. cornstarch
3 tbsp. peanut oil
1 tsp. finely chopped gingerroot
1 tsp. finely chopped garlic
2 tbsp. peanut oil
½ teaspoon chicken broth
½ cup chicken broth

Directions:
Directions:
Soak mushrooms in warm water until soft, about 30 minutes, drain and rinse in warm water remove and discard stems. Cut caps into 1/2 inch pieces.

Trim fat from beef; cut beef with grain into 2" stripes. Cut strips across the grain into ⅛ thick slices. Toss beef, 1 tsp. cornstarch, 1 tsp. peanut oil,1 tsp. salt, sugar, soy sauce and white pepper in glass or plastic bowl. Cover and refrigerate 20 minutes.

1. Cut broccoli or asparagus into 1 inch pieces. If pea pods are use leave whole. Make 1 inch slices in broccoli stems. Place vegetables in boiling water and cook 1 minute; drain immediately rinse under cold water , drain. Cut green onions into 2 inch pieces. Mix ¼ cup chicken broth, the oyster sauce and 2 tbsp. cornstarch. Set aside.

2. Heat wok until 1 or 2 drops of water bubble and skitter when sprinkled in the wok. Add 3 tbsp. peanut oil, rotate wok to coat sides. Add beef, ginger root and garlic; stir fry until beef is browned, about 3 minutes remove from heat.

3. Add 2 tbsp. oil, coat wok sides add vegetables ( broccoli asparagus or pea pods) and ½ tsp. salt, stir fry 1 minute. Stir in ½ cup chicken broth heat to boiling, stir in beef, heat to boiling. Stir in cornstarch mixture; cook and stir until thickened, about 15 seconds

Garnish with green onion.
