8 bacon strips

1/4 cup fresh parsley, minced

1 tsp salt

1/2 tsp ground cumin

1/4 tsp pepper

1 med. onion, chopped

2½ pounds beef stew meat

2 cans (14½ oz each) stewed tomatoes, drained (I like to use the petite stewed tomatoes)

1 Tbsp chili powder

2- 8 oz cans tomato sauce

2- 16 oz cans pinto beans

1- 4 oz can diced green chili's

In a skillet (or if you have a Ninja Cooker you can fry the bacon right in the cooker), fry bacon until crisp. Remove to paper towel to cool. Once cool, break up into crispy pieces.

Brown beef stew in the bacon drippings.

Add all ingredients to the slow cooker

Cook on low for 8 hrs, stirring occasionally

This is a very tasty and hearty chili stew. This has always been a great hit for dinner and for Pot lucks.
