4-6 Pork Filet's (to add a extra flavor twist to this, you can wrap the filet's in bacon before grilling) Just wrap a slice of
bacon
around sides of Pork Filet and secure with a toothpick)
I buy a Pork Tenderloin from the meat dept. It looks like a tube. I then take it to the meat dept butcher and they will slice
this into Pork Fillet's. Have them cut into 1½-2 inch thickness. At 1½" thickness it's a perfect size and I can get about 6-
7 good size fillet's.

1/4 cup chopped sweet onion
1/2 tbsp olive oil
1/3 cup chopped yellow bell pepper
1 tbsp sugar
1/2 jar, (1lb, 8 oz size ) mango packed in light syrup, drained
1 tbsp fresh key lime juice
1 lg jalapeno, seeded and finely minced (If you don't like the heat of jalapeno, substitute with a Pablano pepper which is
very tasty with a "hint" of heat.
1 tbsp fresh cilantro, chopped or minced
Salt to taste

To make Mango Tequila sauce, saute onions in hot olive oil over medium heat until tender and slightly browned on the edges. Add bell pepper and saute until heated through. Stir in sugar until dissolved, remove from heat.

Combine Mango, tequila 1/2 tbsp of the key lime juice and onion mixture in blender. Puree in blender until smooth.

Combine minced jalapeno, cilantro and remaining 1/2 tbsp key lime juice in small bowl, salt to taste. Let stand until ready to serve.

Heat your outside grill or your inside grill skillet on medium heat. Turn every 5 minutes. This helps to cook the inside without burning the outside. I will turn my heat down lower for about the last 10 minutes. You want a nice light pink center. So tender and melts in your mouth like butter. I cook the 1½" thick fillet's for about 35-40 minutes. Remember, you don't want to cook these on a high heat as they are very thick.

To serve, spoon Mango Tequila Sauce onto plate, top with Pork Filet. Garnish with minced jalapeno mixture.

This is a wonderful tasting recipe. It's a flavor explosion and makes a very impressive eye catching dish. They will think you spent Hours slaving in the kitchen!! Make sure the family is out of the house all day so that they won't know you were actually watching T.V. while performing quality control test on the bottle of Tequila.

**** The Mango Tequila Sauce can be used on other meats, which I REALLY love on grilled Yellow Tail.
