1 jar old English Cheddar Cheese (sharp)
1/2 jar Roka Blue Cheese (see below)
2 lg. cream cheese
small onion (grated)
1 c. chopped parsley (1/2 inside ball)
1 c. chopped pecans (1/2 inside ball)

Roka Blue cheese is no longer made, use 1/2-1 Rondele Gourmet spreadable blue cheese

Half the parsley & half the pecans mix with cheese. Roll ball in remainder.

Soften cheese and mix all ingredients, chill. Then make into balls & roll in chopped parsley & pecans.

Original recipe called for Kraft Rodka Blue Cheese, they quit making that spread. Kraft offered a homemade version: 8 oz cream cheese, 5 oz blue cheese crumbed, ~6 tbsp water. Bring cheeses to room temp and cream in food processor.

Someone online used Rodele Blue Cheese and said it her cheese ball tasted better.

Grandma Bonnie made this cheese ball every Christmas. It was hit. Everyone loved it too when I made it.
