1 lb sweet Italian Sausage (or any sausage you wish)
1 medium white onion, peeled and diced
3 cloves garlic, minced
1 red bell pepper, cored and diced (or 1 jar of roasted red peppers, drained and diced)
6 eggs
1/3 cup milk
1 (20 oz bag frozen hash browns (thawed, I use the cubed kind)
2 cups shredded cheddar o mozzarella
1/4 tsp freshly-ground black pepper
*(optional toppings: thinly sliced green onions)

Directions:
Directions:
Heat oven to 375 degrees F.

Cook sausage over medium-hight heat until browned, drain, crumble, and place in a large mixing bowl. Pour all but 1 tbs grease from pan. Sauté peppers (unless using the jarred version) and onions in remaining grease, Then add the garlic (and jarred peppers) and saute 2 more minutes. Now pour this vegetable mixture, hash browns and 1 1/2 cups cheese into the bowl with he sausage. Sir and combine.

In separate bowl wish eggs, milk and pepper. Add them to the mixture, stir and pour into a greased 9x13 pan. Top with remainder of cheese. Cover with foil and bake for 20 minutes.then remove the foil and bake an additional 10-15 min. till the potatoes begin to brown. Let casserole rest for 5 minutes and sprinkle with green onions to serve.
