2 cups water
2 cups white vinegar
1 teaspoon cloves
1 teaspoon allspice
1 tablespoon cinnamon

Note: place cloves, allspice in a tied bag to remove later.
Prep: Wash beets, cook until tender; dip into cold water and remove peel. Combine remaining ingredients to make syrup. Pour over beets and simmer for 15 minutes. Pack in sterilized jars and seal.
