2 chicken breasts, cubed
⅓ cup sweet red chili sauce
⅓ cup low sodium soy sauce
4 cloves garlic, minced
1 pkg frozen stir-fry blend vegetables*
2 Tbsp vegetable oil
2 cups brown rice, cooked

* Blend includes broccoli, sugar snap peas, green beans, carrots, celery, onions, mushrooms, and red peppers.

Add cubed chicken, sweet red chili sauce, soy sauce, and garlic in a sealable bag or container and mix well. Marinate for at least 1 hour.

Heat 1 tbsp vegetable oil in wok. Add frozen vegetables and cook for 4-5 minutes. Set vegetables aside in a medium bowl. Heat remaining 1 tbsp vegetable oil in wok. Add chicken (and marinade) and cook for 5 minutes or until chicken is cooked throughout. Add to the bowl of vegetables and stir well. Serve with brown rice.
