INGREDIENTS:

1 lb. Prawns (12-16) pieces.
6 TBS Chopped Fresh Cilantro
6 TBS Chopped Fresh Basil
6 TBS Chopped Fresh Oregano
Salt & Pepper
1/4 C EVOO + 4 TBS
1 1/2 tsp Crushed Red Pepper Flakes
2 TBS Minced Garlic
1 Small Red Onion, finely chopped
1 - 15 oz Can Crushed Tomatoes (San Marzano).
1/2 C Red Wine
1 Lemon juiced
1 small loaf French or Italian Bread, sliced

1. Remove shells from shrimp and place in non-reactive bowl (glass preferred).

2. Add 2 T EVOO, salt & pepper and 1 T EVOO and toss. Set aside.

3. To a medium saute pan (preferably non-stick) add 2 TBS EVOO and heat over medium/high heat, toss in red onions and cook till softened, approximately 5 mins.

4. Preheat a grill pan. In a medium bowl add 3 TBS each of cilantro, basil and oregano. Add EVOO, 1/2 tsp red pepper flakes, 2 TBS minced garlic, salt & pepper. Mix together and brush bread slices.

5. Grill bread for 2 mins on each side.

6. To saute pan, add remaining 2 TBS garlic and cook stirring, 30 seconds. Add remaining red pepper flakes, cilantro, basil and oregano.

7. Stir together and cook for 1 min. Pull pan away from heat and add red wine.

8. Return pan back to heat and stir in crushed tomatoes.

9. Season with salt & pepper and add shrimp and cook for 3 to 5 mins till shrimp turn pink.

10. Add the lemon juice.

11. Serve over grilled bread.

This is a flavorful and satisfying dish. Just a note of heat from the red pepper flakes and the fresh herbs seal the deal. Do make the effort to find San Marzano Tomatoes, a little more expensive but worth it their flavor says it all.
