1 med. sweet onion, minced
1-2 Cubanelle peppers, seeded & chopped
1 rotisserie chicken, skin removed & meat shredded
1 can fire roasted diced green chile pepper, drained
1 can seasoned black beans, drained
1 can original Rotel, drained
4 oz. Velveeta cheese, cubes
2 cans green or red chile enchilada sauce or 2 pkgs. Frontera Enchilada Sauce (It's gluten-free)
12 sm. white or yellow corn tortillas
1 C. shredded Cheddar
fresh cilantro, rinsed & leaves removed from stems

In lge. skillet, over med. heat, saute onion & peppers in olive oil. Add chicken, chiles, black beans, Rotel & Velvetta cubes. Stir until cheese is fully melted. Cover bottom of 9x13" baking dish with sauce. Warm tortillas in microwave for about 1 min. to soften. Dip in enchilada sauce before filling & rolling. Scoop about 1/2 C. filling onto each dipped tortilla, roll & place seam down in baking dish. Cover with remaining sauce. Sprinkle with Cheddar & cilantro. Bake uncovered for 15 min. at 350º until bubbly & cheese is melted.
