4 medium to large sweet potatoes (yams)
1/4 c. olive oil
Salt, to taste
Parsley, to garnish

Directions:
Directions:
Preheat oven to 400 degrees. Cut the sweet potatoes lengthwise into 1/2 inch thick strips and toss with the olive oil.
Coat a baking sheet with non-stick cooking spray and arrange the potatoes on the baking sheet. Bake the potatoes for 15 to 20 minutes or until golden. Turn potatoes over and bake for another 15 to 20 minutes or until brown all over.
Sprinkle on the salt and add parsley for color and serve.
