1 Qt Fresh Huckleberries
3/4 C Water
2 tsp Lemon Juice
1 1/4 C Sugar
3 rounded T. Cornstarch (1/4 cup)
1-8 oz Philadelphia cream cheese
1/4 C Powdered Sugar
1 tsp Vanilla
1 9" baked pie shell or Pie Crust Recipe Below

Ingredients for Pie Crust
1/2 C finely chopped pecans
1 C all purpose flour
1/2 C butter - room temp
1/8 tsp salt

Directions:
Directions:
Place 2 cups of the berries and the water in a saucepan. Cook 3 minutes. Add Lemon juice. Add the sugar and corn starch, which has been mixed together and cook until thick and clear. Cool. Beat cream cheese till fluffy adding the powdered sugar and vanilla. Line the baked pie shell with the cream cheese mixture. Fold the remaining 2 cups of berries into the cooled, cooked berries and spread over the cream cheese in the pie shell. Chill. Actually better after chilling 24 hours. Serve with whipped cream or ice cream if desired.

Alternate pie crust:

Preheat oven to 350 degrees

Mix the chopped nuts, flour and salt togther in a small mixing bowl. Cut in butter until lumps are the size of small peas. (You can use a cheese grater on butter if it is still cold) Press into a 9 inch pie pan. Lightly press a double layer of aluminum foil into the pastry-lined pan. Bake in a preheated oven for 20 minutes or until golden brown. Remove foil and set crust aside to cool.
