3 cups of an assortment of vegetables such as:

Asparagus
Broccoli
Cauliflower
Carrots
Onions
Peppers
Zucchini

2 tbsp oil
salt and pepper to taste

Directions:
Directions:
Preheat oven to 375º. Chop your choice of vegetables to large bite sized pieces. Toss in a bowl or ziplock bag with oil and place on parchment paper covered cookie sheet. Sprinkle with salt and pepper and any other choice of seasoning. Roast for about 10 minutes or until slightly softened. Enjoy!

Note: if you are roasting hard vegetables such as potatoes, sweet potatoes or butternut squash, increase cooking time to 35-40 minutes depending on size of vegetables.
