1 Tbsp Olive Oil
1 Large Onion Chopped
1 Clove Garlic, minced
8-10 Roma Tomatoes, peeled and seeded (about 2 Cups)
4 Large Red Peppers, Charred, peeled, seeded and deveined
1 Bay Leaf
41/2 Cups Vegetable Broth or Chicken Broth
Pinch Saffron
Basil Leaves or Chervil Sprigs to Garnish

Directions:
Directions:
Medium heat, combine Olive Oil, Onion and minced Garlic. Cover and let cook for a few minutes.

Add Tomatoes and let steam for about 10 minutes. Add the Red Pepper, Bay Leaf and Chicken Broth.

Let simmer for about 40 minutes. Remove Bay Leaf. Let cool and blend in a food processor or blender. Strain through a fine sieve, add the Saffron, bring the Bisque back to a boil and serve with garnish.
