CHOICE OF MEAT:
1 can spam or 1 or more pounds of ground cooked ham (1 to 1 1/2 pounds)
1 4" piece of grated peeled and grated carrot , set aside ( this will be re-ground again with the other veggies)
1 to 1 1/2 stalks celery, washed and sliced
1 scallion onion top, sliced ( may use 2-3 tsp. chopped sweet onion)
2-3 tbsp. sweet relish
Mayonnaise

Directions:
Directions:
Ground all ingredients except mayonnaise into a medium size bowl.
Add the amount of mayonnaise you desire to make a spread.
Serve on bread, toast, crackers or on top of a toss salad.
Store ham spread in the refrigerator in a covered container. This can be made up a day ahead if needed.

This can be served at parties or for a simple lunch. Most kids really like it if the onion is not strong. I prefer to use the scallion top as it is not as strong as the sweet onion. A small squirt of mustard can be added but not everyone likes the mustard in this salad. It is by your choice to add it.
