2 Packages Active Dry Yeast
⅔ Cup Sugar
½ Cup Mashed Potato Flakes
1½ Teaspoon Salt
5⅓ (about) Cups All Purpose Flour
½ Cup Margarine (1 Stick)
2 Large Eggs
¾ Cup Water (Heat To 125º)
¾ Cup Milk
Heat Milk, Water & Margarine to 125º

In bowl, combine yeast, sugar, potato flakes, salt and 1½ cups flour. In saucepan, heat milk, margarine, and ¾ cup water until very warm (125º). With mixer at low speed, beat liquid into dry ingredients. At medium speed, beat 2 minutes. Beat in 2 eggs and 1 cup flour. Beat 2 more minutes. Add the 2½ cups flour; stir until blended.

On floured surface, knead dough about 10 minutes, working in about ⅓ cup flour. Place in a greased bowl; turn to grease top. Cover. Let rise in a warm place until doubled. Punch down & let rest 5 minutes. Grease (15 ½ x 10 ½) cookie sheet or jelly roll pan. (I use 2 or 3 sheets) Shape dough into small balls & place on greased cookie sheets. Let rise about 15 minutes. When light to touch, make impression in center with finger tips. Fill with any kind of filling. Let rise again, about 20-30 minutes. Bake at 375º for about 20 to 25 minutes (depends on your oven). Makes 4 to 5 dozen.

This recipe is from Emily's Great Aunt Lavona Baker and Great Grandma Rose Marks. Everyone in the family loves this recipe and all have preference on which filing to use. They usually recommended using potato water for the water. Somehow this enhances the flavor. Usually at family diners we always had mashed potatoes and gravy so there was an abundance of potato water.
