16 mini sweet peppers, jalapeños, or a mix
1-½ c. cream cheese at room temperature
6 slices bacon, crumbled, or 6 T. bacon bits
3 T grated parmesan cheese
1 tsp minced garlic
½ c. shredded cheddar cheese

Directions:
Directions:
Fry the bacon until crisp, cool and crumble.
Preheat oven to 350º F.
Rinse the peppers and pat dry. Slice off stem, halve lengthwise, and remove stems and seeds.
Combine cream cheese, parmesan cheese, garlic and bacon bits in a bowl. Mix well.
Spray a cookie sheet with nonstick spray.
With a spoon, mound the cream cheese mixture into each pepper half. Arrange on cookie sheet.
Top peppers with shredded cheddar cheese.
Bake in preheated oven for about 30 minutes or until the tops are golden brown.
