2 cups flour
1 tsp baking soda
1/4 tsp salt
1 egg
1 1/8 cup sugar
1/2 cup vegetable oil
2 Tbsp buttermilk
1/2 tsp vanilla extract
3 ripe bananas (medium-large), mashed
1/2 cup + 1/3 cup chopped walnuts

Pre-heat oven to 325. Grease a 9x5x3 loaf pan and dust with flour.
Blend together the flour, baking soda and salt and set aside. Mix togetherthe egg, sugar and vegetable oil until well combined (mixture will be thick). Add the flour mixture and when blended, add thebuttermilk, vanilla and mashed bananas. Mix until combined. Fold in 1/2 cup of chopped walnuts and pour batter into prepared loaf pan. Top batter with remaining 1/3 cup chopped walnuts. Bake for 45 to 60 minutes, until toothpick inserted in centercomesoutclean. Cool for 10 minutes on a wire rack before removing from pan.

Tips:
I typically use 4-5 bananas.
The riper the bananas are, the sweeter the bread.

Personal Notes:
There's no such thing as a bad banana! If it is too ripe for you to eat, freeze them (skin and all) until you have a few to make banana bread or muffins. I always add at least 2 more than the recipe calls for. When frozen, the skin will turn dark and the fruit will be mushy when thawed, so be sure to thaw on a plate. There will be a lot of juice when you peel the thawed fruit. Not a pretty sight, but pretty flavorful!
