Olive oil
1 lb. of sweet Italian dinner sausages (aprox. 5 links)
1 jar of your favorite red pasta sauce
2 medium white onions rough chopped
1 large green bell pepper rough chopped
Italian seasoning
Mozzarella or Italian blend shredded cheese
Submarine rolls - one per sausage link

Directions:
Heat olive oil in a heavy skillet. Sautee sausage links on both sides until done, then remove from skillet to rest on a plate. Add a little more olive oil to skillet and sauté onions and peppers until onions start to get translucent. Add sausages back into the skillet, pour pasta sauce over links, onions and peppers, season to taste with Italian seasoning, then cover with lid and let simmer on low until sauce is warmed through and bubbly . Turn off heat, liberally cover meat and sauce with shredded cheese and put lid back on until cheese is melted.

Serve open-faced over oven-toasted sub rolls.

Alternate option: Serve over cooked noodles.
