Graham cracker crumbs or 10 graham crackers crushed
8 ounces cream cheese
¼ cup sugar
3 eggs separated

8 ounce carton sour cream
2½ Tablespoons sugar
1 Tablespoon vanilla

Preheat oven to 350º.

Butter 4 mini muffin pans and coat with graham cracker crumbs. I find the easy way is to put lots of crumbs in one pan, put another on top of it and press down.

Cream cheese, sugar, and add yolks one at the time. Beat well. Beat egg whites and fold into the mixture. Put in prepared pans filling ¾ full. Cook 350º for 15 minutes. Remove. Cook. They will sink in the middle.
Mix sugar, sour cream and vanilla. Put 1 teaspoon in the middle in the sunken hole. Bake 5 minutes at 400º. Do not let them get brown.

Cool- Remove with a knife around sides. If you like, you can top with cherry pie filling or some other topping when you are ready to serve them.

These keep in an air tight container in the refrigerator for one to two weeks.
