1 (9 inch) pie crust, baked
3 egg yolks, beaten
1 1/4 cups white sugar
4 TB cornstarch
1/2 cup unsweetened cocoa powder
1/4 tsp salt
3 cups milk
1 TB butter
1 1/2 tsp vanilla extract
1 cup whipped topping (frozen, or homemade)

1) Pre-bake a 9 inch pie crust. Cool.
2) In a large mixing bowl, cream together egg yolks and sugar.
3) Gradually add cornstarch and salt.
4) Add 1/2 cup of the milk and the cocoa powder into mixture & blend together.
5) Slowly add rest of milk while mixing at lowest speed.
6) Pour mixture into large saucepan and cook over medium heat, stirring constantly with rubber spatula (scraping bottom of pan) until boiling, then use a whisk to avoid lumps.
7) After boiling 1 minute, remove from heat and stir in the vanilla and butter.
8) Move pudding to large metal or glass bowl and cover top of pudding with plastic wrap to avoid getting a thick film on the pudding while cooling.
9) Let cool for 30 min. and pour into pie crust. Cover with plastic wrap and let cool completely.
10) Chill in refrigerator at least 1 hour before serving. Garnish with whipped topping and chocolate sprinkles or shavings..
