1 small sweet potato (about 1⁄4 pound), peeled

Preheat the oven to 400F. Line a baking sheet with parchment paper.
Using the thinnest slicing disk on a food processor or a sharp knife and a very steady hand, slice sweet potato crosswise into very thin 1⁄8-inch rounds. Put the slices in a large bowl and drizzle with olive oil. Using your hands, gently toss the slices very gently until evenly coated.
Lay sweet potato slices in a single layer, overlapping them as little as possible, on the prepared baking sheet. Use a pastry brush to spread the oil remaining in the bowl on any uncoated slices. Bake 10 minutes. Remove the baking sheet from the oven and, using a wide metal spatula, turn over all of the slices. Sprinkle with 1⁄4 teaspoon salt and continue to bake until the slices are dry and some are lightly browned, about 10 minutes longer. Check often during the last few minutes of baking.
Remove the baking sheet from the oven and slide the chips into a serving bowl. Sprinkle with a little more salt and serve warm.
