I am not including specific amounts because I want you to make this "By the Seat of Your Pants".
I chose Yukon Gold potatoes but you can use whatever kind of potato you have on hand. It's important to slice the potatoes thinly with a sharp knife or with a mandolin or food processor. You need to pick a pan that can go in your oven or toaster oven which is big enough for how many people you are serving. Figure one medium sized potato per person.
Butter the dish liberally then set down the first layer of potatoes slightly overlapping from the outer edge to the center. Sprinkle with salt and pepper. Then using a small mesh strainer filter a little Pillsbury flour over the potatoes. A sprinkle, don't completely cover. Next, sprinkle grated cheese if using, over this. Dot with dabs of butter. Do this for two more layers for a total of three layers.
Pour dairy of your choice over potatoes until one-quarter inch from the top. Sprinkle with paprika. Bake in a 350º until browned. Start checking after 30 minutes with a knife through the potatoes. If they cook before they are browned you can run them under the broiler.

Everybody should know how to make scalloped potatoes because it's delicious and looks fancy for company or just the family. Serve leftovers for breakfast with eggs. Enjoy! -Mimi (marybradshawduncan@gmail.com)
