1 lb. lean ground beef
¼ - ½ c. brown sugar, depending on taste preference
¼ c. soy sauce (I prefer low sodium)
1 tbsp. sesame oil
3 cloves garlic, minced
½ tsp. fresh ginger, minced
½ - 1 tsp. crushed red pepper flakes, to desired spiciness
salt & pepper to taste
1 bunch green onions, diced

Heat a large skillet over medium heat and brown ground beef with garlic in the sesame oil. Drain most of the fat, then add brown sugar, soy sauce, ginger, red pepper flakes and salt & pepper. Simmer for a few minutes to blend the flavors. Serve over steamed rice and top with green onions.

I have tried numerous variations of this recipe, and it always turns out great! Here are some things to try:

1) Ground Turkey or Chicken instead of Ground Beef
2) Frozen Meatless Crumbles for a Vegetarian option
3) Add chopped broccoli, broccoli slaw, or bean sprouts to the meat mixture to get more veggies
4) Top with chopped peanuts or cashews just before serving

A little trick I've learned about fresh ginger: Peel the entire piece of ginger root and cut into 1/2" pieces. Put in storage bag and keep in freezer until you need to use again.
