1 1/2 cups water
2 Tbsp Matcha green tea
2 cups long grain white rice
1 13.5 oz. can coconut milk

1. Rinse rice twice and discard rinsing liquid. Set aside.

2. Bring water to a gentle boil. Measure Matcha and place in a measuring receptacle, slowly whisk in the boiling water.
Note: Initially mix approximately 1/2 cup of boiling water into the matcha, whisking to break up clumps, gradually adding remaining hot water continually whisking till smooth.

3. Add coconut milk and whisked Matcha tea in a heavy pot and place over high heat, stirring together. Once the coconut milk and Matcha have integrated well and large bubbles appear on the surface of the liquid, add the rinsed rice and stir.

4. Cover pot and turn down the heat. Simmer for 20 minutes on low heat.

For a much subtler matcha flavor, use only 2 tsp of Matcha. 11/2 T of Matcha is personally preferable.

Do not use light coconut milk. The full fat is necessary for the flavor.

Long grain white rice works best for this recipe.
