1 9" pie crust
1/2 lb bacon
1/2 c green onion, chopped
1 (8 oz) pkg mushrooms, chopped
2 c zucchini (approx. 2 med.), sliced
2 cloves garlic, pressed
1 c (4 oz) cheddar cheese, shredded
3 lg eggs
1 c milk
1 tsp parsley
1/4 tsp salt & pepper
1/8 tsp nutmeg

Place pie crust in pie pan, set aside. Cook bacon over medium heat. Remove bacon, drain & crumble. Reserve 1 tbsp bacon drippings & saute onions, mushrooms, zucchini & garlic until tender, about 3 - 5 minutes. Add bacon to veggies and spread over bottom of pie crust. Sprinkle cheese over veggie/bacon mixture. Whisk eggs, milk & seasonings together & pour over cheese. Bake at 375 for 35-40 minutes.
