5 lbs russet potatoes, peeled and cooked until tender
3 cups chopped celery
1½ cups sweet onion, chopped fine
2½ cups mayonnaise
1 TBS yellow mustard
6 boiled eggs, chopped
3 cups sweet relish
3 TBS apple cider vinegar
1 TBS celery seed
½ cup sugar
½ tsp salt (optional)

Directions:
Directions:
Chop (see note below) potatoes in large bowl. Chop eggs separately in a small bowl and then add to the bowl of potatoes. Add the celery, onion and relish to the potato bowl. Using the small bowl mix mayonnaise, mustard, vinegar, sugar and salt (optional). Pour the mayonnaise mixture over potatoes, add celery seed and mix well. Turn into serving bowl, lightly garnish with paprika. Chill in the refrigerator. This tastes better after sitting a day or two before serving.
