1 Chopped Fresh Beet
5 Chopped Radishes
½ Chopped White Onion
1 Quart of Chopped Cherry Tomatoes
½ Quart of Chopped Strawberries
½ Chopped Cucumber
1 Chopped Bell Pepper
½ C. Cooked Quinoa
½ C. Chopped Mint Leaves
¼ C. Lemon Juice
⅓ C. Olive Oil
2 Crushed Garlic Cloves
Salt and Pepper to taste
