1 bag of tater tots (frozen)
1 lb of lean ground beef
1 small yellow onion, diced
1 green bell pepper, diced
1 pkg of taco mix, use as instructed
1 cup of sour cream
1 (8-oz) pkg of cheddar cheese and half on top at the end)
⅛ tsp of salt
¼ tsp of black pepper
½ tsp of onion powder
2 small tomatos for servings, diced

SPRAY slow cooker with non-stick spray. Add the tater tots down in a single layer. Set aside. In a large skillet, set medium high heat, brown the beef, onions and bell pepper.
DRAIN the fat and add the taco package ingredients and continue cooking and stirring until the seasoning has thickened. POUR the meat mixture over the tater tots in the slow cooker.
IN a medium sized bowl, add sour cream, salt, black pepper, onion powder, and half the cheddar cheese. Spread this sour cream mixture over the meat mixture in the slow cooker.
COVER and cook on low for 4.5 hours, without opening the lid during cook time. After timer, add the remaining cheese evenly over casserole. Cover and let cheese melt, 5-10 minutes. Top with diced tomatoes.
