1 large onion
4 T butter
4 carrots, chopped
4 c. chicken broth
2 T tomato paste
2 T white rice
1 c cream

Directions:
Directions:
Saute onion in butter until clear but not brown. Add carrots, broth, tomato paste and rice to onions and simmer 35 min. or until carrots are soft. Blend soup 1 cup at a time in a blender (puree); add back into a pot when all blended. Add cream and salt to taste. Heat to simmer again and serve with green onions, sour cream or butter on top.
